Experiment 8

Analysis of Foods for Starch and Vitamin C

Purpose

1) To determine if certain foods contain starch and, 2) to measure the Vitamin C content of some fruit-juice drinks. Be certain that you are specific when you write your purpose. Identify the samples you analyze.

Conclusion

Summarize your results. Which foods contain starch and which do not? Compare the values for the Vitamin C contents that you determined. What is the value of the concentration of vitamin C, in mg per 20 mL, in each of the juices analyzed?

Extensions

This method can be used to study the effect of aging, heat and light on the vitamin C content of fruit or vegetable juices.
